Raw Food Recipes

Easy raw food recipes, and only one requires a dehydrator!

Many of these recipes are of the 'transition food' type - foods that to some extent mimic cooked foods. They're useful for those new to raw, those who'd like to increase their raw intake, and also for those 100% raw foodists who like to make things for non-raw friends and family, who may be more receptive to raw food if it looks and tastes a little like foods they 'know'.

Please bear in mind that some of these recipes were created prior to my studies of Natural Hygiene, and may well contain ingredients I use infrequently myself now (eg salt, chili, garlic - and where they do occur in my recipes, I've reduced quantities significantly). See 'What is the Raw Food Diet?' for more information on these. However...I came to my present way of eating VIA such raw dishes, had lots of fun with them on my journey, and hope you will if you're on a similar path. I still make these dishes occasionally for my family, and we all enjoy them!

ANTI PASTA (Sarah from goingbananasblog.com)
Blend lots of ripe tomatoes with a ripe mango and a little basil. Pour over spiralised courgette (zucchini). Garnish with diced yellow bell pepper and halved raw olives.


'Cheeze' ā€˜n’ chives & Tzatziki(Ani Phyo, RawforLife)


DATE SYRUP Blend soaked Medjool dates with water. Will store covered in jar in fridge for three days (and on the third day tastes like liquid toffee...). Use in recipes as substitute for agave nectar, honey etc.

FRUITY 'PORRIDGE' (Dr Doug Graham)
Put 2 Medjool dates (soaked and chopped), 3 apples (diced - don't peel), 5 bananas and a pinch of cinnamon into a food processor. Process.


GAZPACHO-STYLE STARTER' (Dr Doug Graham)
Mix cubed papaya, cubed tomato and chopped basil. Garnish with basil. Could be a starter, soup (pulse-blend), or filling for Romaine lettuce wrap.


Greek-style Flax Crackers(RawforLife)


GREEN JUICES

Try: 4 cups spinach, 2 sticks celery, 2 green apples
OR...
3 cups kale, 1 cup spinach, 2 sticks celery, 1 small pineapple. A little rocket (arugula) also works well in this.


GREEN WRAPS (from Jack, 30Bananas forum)

Filling: Mix 3 courgettes, spiralised or grated; red bell pepper, julienned or chopped. Sauce: Blend 250g tomatoes, 1 medium mango; Spread a collard/spring green leaf (remove thickest piece of stalk first) with sauce, fill, and wrap!
Optional additions: grated carrot, banana, celery, apple cubes, avocado...Also works with romaine leaves. It's the mango sauce that makes this sublime!


Kale and Avocado Salad (adapted from Chad Sarno recipe)


MON'S SOUP (from Mon, 30Bananas forum)

Ingredients: 1 small v. ripe honeydew melon, 1 1/2 ridge cucumbers (don't peel), small handful of mint. For garnish: 1/2 carrot, few drops of lime, 2-4 sprigs of dill. Remove flesh from melon, putting aside some of it to stir into the soup later. Roughly chop the cucumber. Slice carrot very thinly. Blend (most of) the melon, the cucumber and the mint (you may need to push the mixture down to get it blending initially, but don't overblend - texture needed.)
Pour into serving dishes, stirring in reserved chunks of melon. Squeeze lime on top, arrange a few slices of carrot in the centre and garnish with sprigs of dill.

SALAD DRESSINGS
1. Blend pineapple with pine nuts
2. Blend equal amounts of cold-pressed sesame oil, lime juice and date syrup.

THAI MANGO SOUP (RawforLife)
5 Thai yellow mangoes (eg Nam Dok Mai - available at ethnic grocers and even Tesco July-ish UK).
Cucumber - half a large, or whole small.
Celery - stick or two.
Small handful Thai basil, chopped (if no Thai basil, mix Italian basil and fennel).
Small handful coriander (cilantro)
Lime

Blend half the mangoes, cucumber, celery, basil and coriander. Cut the remaining mango, cucumber and celery into BIG chunks. Pour blended mixture into serving bowls. Pile in the big chunks. Stir in the remaining chopped herbs. Squeeze over lots of lime juice. Optional - garnish with more herbs.


WALDORF-STYLE SALAD (RawforLife) Pulse-chop in food processor: 3 red apples (cored but not peeled), 4 sticks of celery, 1/2 cucumber. Mix with a 'cream' made of 1/2 cup raw cashews blended with 1/4 cup of water and 1/4 cup of lemon juice. Garnish with celery leaves and serve on a bed of romaine lettuce.
